Important notes:

The story of the “free diet cookie”…
I was watching TV one night and saw an ad for diet cookies. Having cooked my whole life, I was curious as to what they were making and how much they were. I looked at the website and found that a one month supply of cookies was around $400.  “These better be damn good cookies”, I thought. Then I decided to make some myself.

Using 100% of products you can pick up at Wal-Mart and making sure that everything that went in was healthy (questionable of course are the artificial sweeteners) , I developed the following recipe.

One problem, they are SO GOOD, you might want to eat them ALL when they come out of the oven. Of course this would go against the whole theory.

These are SO GOOD and healthy I recommend them for the kids to replace those store bought snacks.

The Recipe...

Will make 14 – 20 large cookies depending on size.

Preheat oven to 350

In a large bowl add the following:

2 Cups Quaker Oats

2 Cups Plain, Enriched, Bran Flakes
(Slightly crushed by hand to the same size of oats. Use ENRICHED product as this is where many of the added vitamins come in.)

1 Cup Whole Wheat Flour

½ Tsp Salt

2 Tsp Baking Soda (not baking powder)

¼ Cup Splenda or Sweetener

¼ Cup chopped or Sliced Almonds

2 Tsp of Cinnamon

 

Mix around slightly then add:

2/3 Cup cooking oil (your choice)

½ Cup of margarine (squeeze brand or slightly melt stick)

3 eggs beaten slightly

3 Tsp Vanilla Extract

¾ Cup raisins

¼ Cup dried cranberries (known as Craisins)

¼ Cup dried blueberries (can be expensive and I like to use fresh ones when they are in season)

1 large apple finely chopped (about the size of raisins)

2 bananas finely chopped

1/2 cup finely chopped strawberries

Mix well with spoon for several minutes.

I recommend you make them like small hamburger patties.
(If you have a small ice cream scooper it helps.)

Scoop about ¼ cup into the palm of your hand, knead and semi flatten (not really flat, like a hamburger).

Place on cookie sheet with parchment paper. (no grease)

They can be close as they do not rise or expand much during cooking.

Bake on middle rack for approx 15 minutes.

I will often shut off oven at 15 minute mark and allow to sit in oven for another 2-5 minutes.
(If made large and fat.)

Remove and allow to cool for a short time.

Icing if desired: (I always put it on.)

1-2 tablespoons of half and half or heavy cream.

Add Splenda or other artificial sweetener until you have a “runny icing”.

(Sort of like wallpaper paste, takes more than you might think.)

Dip small spoon in this mixture then allow drops to fall on top of cookies.

Be careful, this is VERY sweet.

 

Storing:

Allow the cookies to cool for about an hour and then place them in sandwich baggies. (two each)

Keep refrigerated due to all the fruit, eggs and other ingredients and no preservatives added.

Try microwaving them slightly if desired before eating.
